Some of you may be aware of the fact I'm vegan and a student. This means that usually when I crave chocolate I can't really afford it with dark chocolate bars in the student shop costing £2 probably and free from 'milk' chocolate requiring a walk to Morrisons, it's much easier to have something homemade or just a hot chocolate.
These are flourless 'cupcakes' inspired by this flourless muffin recipe my mum sent me on pinterest (follow me on pinterest here!) which are supposedly around 170 calories each although mine were smaller so probably less. The mixture made 12 cupcakes which last 5 days in the fridge and are a really great snack when you fancy something chocolatey, especially if like me you could eat chocolate peanut butter off the spoon...
Ingredients:
2 ripe bananas mashed
1 cup of peanut butter - I used creamy but crunchy would be nice!
1/4 cup of maple syrup
1/3 cup of cocoa powder
A few drops of vanilla extract (if desired)
First pre-heat the oven to 180°C then mix all the ingredients together until well combined, I mixed the banana and peanut butter first and then added everything else but it really doesn't require much order. Next place cupcake cases in a cupcake tray and spoon the mixture evenly into each case. Place in the oven for 15 minutes. Once removed from the oven leave the cakes in the tray until completely cooled then place in the refrigerator and snack on whenever you feel like it!
They are honestly super yummy and satisfy a chocolate craving 100% although they are definitely nothing like cake!
