Though they're not the quickest breakfast, they are indulgent, relatively cheap and perfect for a Sunday morning! I absolutely love gingerbread flavoured anything at this time of year, Gingerbread Lattes from Starbucks are my Jam but they are quite pricey and not really the best breakfast, These pancakes taste exactly like gingerbread and actually would be sooooooo damn cute and so fun for children (and adults obviously) if you used a gingerbread cookie cutter placed in the frying pan and poured the mixture into it to create an actual gingerbread man pancake that you could then decorate and I would have done if I was a student who had cookie cutters but lets be real not many students do...
Ingredients:
1 cup of plain flour
1 cup of oats
1 cup of nut or soya milk (can do half water, half mylk)
1 teaspoon of ground ginger
1 teaspoon of ground cinnamon
1 teaspoon of maple syrup (optional)
Add all pancake ingredients except from the baking powder to a large bowl or blender and mix or blend. Blending creates a creamier mixture as it breaks up the oats but mixing in whole oats tastes just as good, it's just a slightly different texture.
Once mixed or blended stir in the baking powder to the mixture.
Melt some coconut oil in a frying pan and then spoon the mixture into the pan and let cook until bubbles form on the top, then flip over with a spatula or fork and cook for an equal amount of time on that side. Repeat this until you've used up all of the mixture and have a stack of 6/7 pancakes.
Once they're done, top with whatever you prefer and enjoy! I added peanut butter, banana, maple syrup, cinnamon and sprinkles to mine and they were delightful!
